Gourmet eating, or even just the simple ability to boil pasta on a stovetop, might sound like a luxury to many students living on campus or commuters who just don’t have the time to dedicate to cooking on a budget.
If you want to ditch the coffee and microwaved Ramen, here are some easy recipes that you can make in a mug that will fill your belly without breaking the bank or an oven.
Mug French Toast
1 tablespoon butter
1/4 cup milk
1 egg, beaten
1/4 teaspoon ground cinnamon
1/4 teaspoon white sugar
1/4 teaspoon vanilla
2 slices of bread
Maple syrup
Melt butter and tilt around in the mug until the interior is coated. Stir in milk, egg, cinnamon, sugar and vanilla. Cube bread and press into milk/ fl our mixture. Microwave for 90 seconds. Serve with maple syrup.
Mug Mac and Cheese
1/3 cup macaroni noodles
1/2 cup water
2 tablespoons milk
3/4 cup shredded cheese
Salt
Pepper
Combine pasta and water in a mug. Use a larger mug to avoid boiling over.
Microwave for two minutes on 50 percent and stir. Repeat this process twice. If the mixture begins to boil over, pause for a couple second and continue.
When the mixture is cooked, pour off excess water, and add milk and cheese. Microwave for 45 seconds then add salt and pepper for taste.
Mug Pizza
4 tablespoons flour
A pinch of salt
1/8 teaspoon baking powder
3 tablespoons milk
1 tablespoon olive oil
3-4 tablespoons marinara sauce
Shredded cheese Toppings (pepperoni, sausage, mushrooms, etc.)
Dried herbs Mix flour, salt and baking powder. Whisk in milk and oil. Add marinara sauce on top and cover in cheese. Use any desired toppings/herbs. Microwave for 80 seconds.
Mug Chocolate Chip Cookie Cake
1 tablespoon butter
1 tablespoon white sugar
1 tablespoon brown sugar
1/8 teaspoon vanilla (about 3 drops)
Pinch of salt
1 egg yolk
3 tablespoons flour
2 tablespoons semisweet chocolate chips
Melt the butter in the microwave then stir in sugars, vanilla and salt. Separate the egg, and stir in the yolk. Add flour and stir again.
Make sure there is no fl our sticking to the side. Finally, stir in chocolate chips then microwave for 50-60 seconds.
